Probably due to the burning heat, the Aussies celebrate Christmas with barbecue, cold ham, and ice-cooled beers from the eski. These are all enjoyable in their own right, but somehow Christmas is meant to be about comforting food, rich puddings, and bottles of wine for that extra beer coat padding. 

There is one thing that the Australians nail about Christmas, however: the legendary Pavlova, or simply Pav, as it has inevitably been shortened to. Fluffy soft meringue coated in chantilly and fresh tropical fruits. If you know, you know. If you don't, find a recipe and teach yourself. The hours will be worth it.

Fortunately for you, we have taken the essence of the Pav and squeezed it into a bottle, giving it a bit of a grown-up kick along the way. Ok, to be fair, this should be the standard way of having this Pavlova bomb, so do yourself a favour and make it fancy. Shake the entire bottle vigorously with a small egg white for about 30 seconds, then shake with ice for another 10-20 seconds. This will result in a smooth and fluffy Pavlova meringue texture - it's definitely worth the extra effort.
